A contemporary hotel in the heart of an industrial heritage site in France, The Chais Monnet (Monnet Cellars) are one of the most impressive industrial sites in France. Created in 1838 on more than two hectares in the heart of the city of Cognac, they have been a rich part of our history ever since. Bordered by the Charente River and close to the most beautiful cognac houses, the Hotel Chais Monnet & Spa wishes to share with you a unique travel experience within characterful premises. Opened in October 2018, the Hotel Chais Monnet & Spa offers 92 rooms, suites and 12 apartments, a one-star Michelin restaurant, a contemporary French brasserie, a Jazz bar, a rooftop lounge, meeting rooms, and a wellness area including a 25m swimming pool, 4 treatment rooms (one of which is a duo), a fitness room, a Jacuzzi, a hammam and a sauna. Spread over four buildings, the rooms and suites are decorated in a classic French style. The combination of noble and natural materials ensures both aesthetic and sensory comfort. In the "Chais", the charm of a historic building that combines a rich heritage with modernity lives on. The Hotel Chais Monnet & Spa hides a monumental treasure, the "Grand Chai des Foudres", which houses the restaurant areas: the brasserie La Distillerie as well as the gastronomic restaurant Les Foudres in the Chai known as "Cathédrale". Within this building steeped in history the Michelin starred restaurant, orchestrated by Chef Mathis Debize, invites you to discover the gastronomic assets of the Charente region.

Second stay in this superb establishment.
The rehabilitation of the old cellars is really successful: a mix of old and modern industrial versions. Note the beautiful beams, left visible in certain rooms and in the common areas or restaurants. Old wood, limestone and Corten steel for a splendid result!
Luxury here is also in the volumes: nothing cramped, everything is vast. Rooms, walkways, restaurants and even the pool area! A dream to enjoy this very large swimming pool in which you can actually do laps...
All the staff are smiling and very professional, whether at reception, room service or the restaurants.
The bedroom door is heavy to open but it guarantees excellent soundproofing. The colors and materials of the vast, even very vast, rooms invite us to let go. The bedding is of excellent quality with several sizes of pillows (and even a cushion for our feet!), beautiful materials and beautiful linen.
The toilets are separate and with hand basin and the bathrooms have a large shower.
All the necessary coffee and other hot drinks are cleverly hidden in a cupboard with the mini-bar and the safe. And there is also a large wardrobe.
What else? ...Even the parking lot is big! :)
I highly recommend and I will return to this magnificent place!

a very remarkable hotel, it looks very business and not very like a hotel, the hotel complex is huge, everything is very spacious. It is very clean and new anyway. When you drive in through the gate (the driveway street is rather messy) don't expect this hotel right away. The restaurant and bistro are quite hidden in the back of the complex and then downstairs. The bistro is very atmospheric and the service is excellent and friendly, also the food is of excellent quality, as well as, how could it not be otherwise, the wine and brandy list. The room we had on the ground floor was spacious with a small garden. Spacious bathroom. The room was unfortunately a bit moodless, the lighting is not dimmable and the room looks a bit bare. Fortunately a separate toilet, which you see very little in France. The breakfast was a bit curious, you have to make a choice, which is actually not possible, between two buffets. In the continental breakfast of 18 euros there is no cheese / cold cuts or freshly cut fruit, so if you want to make a bowl of yogurt with with fresh fruit and a sandwich with cheese with obligatory to take the expensive breakfast, the breakfast did not look very tasty anyway. If there are few guests, it is better to make a fresh breakfast per person than to set up a buffet all morning. Incidentally beautiful bar. free wifi, water in the car.

We spent a very enjoyable two night stay in this hotel, part of which used to be a distillery.
Not knowing that the entrance was through an arch and down a long drive, it took us a couple of drives around the block to find it.
There was lots of free parking, some of which was under cover and it was within walking distance of the centre of Cognac.
The reception ares are light and airy, due to the large amount of glass used in the construction of the hotel. There are water features along each side of the paths connecting different parts of the building. The roof top bar had far reaching views over Cognac.
The swimming pool was superb. I also enjoyed the rain shower experience with a simulation of rain forests, thunderstorms etc. Whilst we were there I had an enjoyable massage.
The only slight criticism was that the breakfast was not explained to us, nor were we given a menu (there was a choice of either a la carte and buffet or a limited continental). We enjoyed the breakfast each morning but did find that it was a little expensive.
Reception staff were delightful; we will be back next year!

Dear AJP1502, Thank you so much for taking the time to share your wonderful experience with us. We are thrilled to hear that you had an enjoyable stay at our hotel, and that you appreciated the unique history of our building as a former distillery. We apologize for any confusion regarding the discreet entrance of the hotel, and we appreciate your patience in finding us. It's wonderful to know that you found our parking convenient and that our location allows for easy access to the center of Cognac town. The water features along the paths are indeed a unique touch. Particularly unhappy with my stay in the hotel chais Monnet which had been booked via LHW and AMEX FHR.
It turns out that the room was not available according to early check in as requested and according to the terms of the reservation, but a handful of minutes before 3 p.m., which means that strictly no effort was made to prepare the room first.
Then it turns out that the service, with the exception of the perfectly organized breakfast service mastered by the room manager, was constantly deplorable and unrelated to the quality expected for this type of establishment.
As for the rooftop, it turns out that they are roughly painted pieces of mdf wood on which some cushions have been deposited sparingly forcing to leave quickly due to the discomfort. As for the rooftop service, naming a few pieces of bread in olive oil is an abuse of language and / or deception, the same for a glass of margarita simply filled to 2/3, without having been iced beforehand and without salt on the edges which is the basis of the drink recipe, and let’s not talk about the quality of the hummus ...
When it comes to consumption at the pool, the same goes for glasses with a lower capacity and without the bottles being presented ...
Everything is good to negotiate and procrastinate, which seems to be the constant line of conduct of this establishment.
As for the room that was supposed to be upgraded due to the status, I was given a view of the hangar/car park, let’s not mention the lack of night setting ...
I would add that my dissatisfaction is all the greater as I have expressed it in situ and that no changes and/or improvements have taken place throughout the stay. It seems unlikely to ruin the stay in a beautiful place by the deplorable quality of the service.
Yet another example of the indigence of the service of this establishment in the fact that not even a simple card was deposited in the room for my friend’s birthday ...
To flee urgently...

My wife and I enjoyed an all too short stay of just three nights at this wonderful hotel. First, the staff, they could not do enough for us, I was currently struggling with some mobility problems and ALL of the team went out of their way to help me get about. They even loaned me a wheelchair to navigate this beautiful hotel and so that I could enjoy the extensive amenities.
Our bedroom was beautiful and because I had informed the hotel that I currently have limited mobility, they provided a room with disabled facilities. These worked an absolute treat with easy access to all of the facilities, especially the bathroom. The rooms are extremely modern and the furnishings are light and airy. We had access to a small garden area and thence to the extensive paths around the property.
The buildings are a wonderful combination of traditional cognac distillery and store areas, looking exquisite, deep in the town of Cognac. Combine this with beautiful extremely modern glass edifices with sculptured steel, partially structural ornamental girding the exterior. The contrast is stunning and awe inspiring.
The rooftop bar is especially worth a visit, or two! Simply for the views combined with the skills and friendliness of the cocktail makers.
The food and service in the Michelin starred restaurant are beyond reproach as is the decor!
The brasserie restaurant is the only area that fails to live up to the standards of this wonderful hotel, the service was still 5 star and friendly and welcoming as well as efficient, however the food failed, in my opinion, to live up to my expectations. That being so might just have been my poor choice of food,
The wines and cognac were indeed perfect. Oh, and an important point, my car which I love was garaged very securely.
We have already decided to return to this fabulous hotel, particularly when my current disability is behind me.

Remarkable and rare architecture mixing classy contemporary with tradition, without any unnecessary concession to fashion.
The rooms and common areas are warm, without ostentation, very comfortable and full of refined details. A very nice decoration exercise.
The only incomprehensible exception is the Brasserie, cold and ordinary.
The gourmet restaurant is worth much more than its single star. Everything is perfect, including the staff.
The flavors are intelligent, and the chewy contrasts enrich the dishes.
We could do without the boring and fashionable recitation of the names of the producers of each ingredient. A good chef knows where to shop, and we don't need to know how he does them.
A special compliment to the Pastry Chef, whose brioche is worth the trip.

I can not even sure where to begin in listing my praises for Chais Monnet. We just returned from a 3 week visit to France which included time in Cognac and Bordeaux. If only we could have spent all our time at Chais Monnet our trip would have been absolute heaven. The property itself is outstanding, modern and yet with a hint to preserving the past in a thoughtful and respectful way. Our room was beyond comfortable, the bed dreamy. i most appreciated the separate water closet with its own sink, a lovely and thoughtful arrangement. The entire property was spotless and attention to detail seemed to be projected at every corner. I am so surprised to see negative comments related to the staff because our experience was the exact opposite of that. Ellie in guest relations went above and beyond to prepare things for our visit, arranging special birthday celebrations for our traveling companion, making dinner recommendations and reservations, and leaving a personal note thanking us for staying. My only regret was I did not get to meet her in person to thank her, she was on holiday during our visit (well deserved Ellie). All the staff from the breakfast crew to the rooftop bar were friendly and amazingly eager to meet your requests. The bar staff was delightful and we enjoyed several evenings in the Jazz House and at the Rooftop bar enjoying cocktails and excellent and informative conversation. The Spa services were professional and spot on and pool, oh the glorious pool. We spent an entire day enjoying spa services and the pool with consistent but discreet food and bar service. I cannot find enough adjectives to adequately communicate our level of satisfaction. We felt welcomed, taken care of, and appreciated, no one was stuffy or overbearing. The five star designation is well deserved and in the future when I return to this area of France the only place I will consider staying is Chais Monnet. Travail bien fait!!! Merci beaucoup pour cette merveilleuse experience.

Just spent five relaxing days of bliss. Our apartment (not the standard hotel room) was spacious and the facilities - especially the pool - were great. The spa, while a little expensive, was absolutely 100% worth it with thoughtful, experienced staff. While you don't need to leave the hotel, there are so many good restaurants within easy walking so its ideally located. Roof top bar and jazz bar were fun/elegant options for the pre-dinner aperitif. Our little dog was made to feel welcome by staff. We had originally requested a ground floor room but were pleased in the long run to get a higher room which caught the breeze. Only negative comment would be the noise coming from delivery vans etc in the morning to the apartment rooms that face the rear driveway (but closed windows fixed that). great break.

the pool and cold jacuzzi
- noisy air conditioning in room 116 - joint in shower inappropriate, limestone in overhead shower which makes it unpleasant to use
- breakfast too expensive with far too many negative points (jam too liquid, butter not very tasteful...)
despite a beautiful setting, the points cited gives me a disappointment for a 5 star hotel, I have experienced 4 star hotels superior in qualities and services

Our stay at the Chais Monnet hotel was great, the decoration combining old and modern gives an unmissable charm to these places. You can feel an unforgettable softness and calm which is facilitated by the professionalism of the staff, so welcoming and discreet, the well-being of their customers and their priority without forgetting the aquatic area, the large swimming pool, the jacuzzi and the sauna and hammam. so nice.
