Detailed Reviews
We had a lovely time at the hotel. Our expectations were high as it is a 5 star hotel and very well rated. The staff were friendly and the spa is great. The room itself felt quite dated and we were disapointed upon arrival. It was clean but we were expecting a bit more for a 5 star hotel. The breakfast is expensive for what it is, although if you are lucky to get a sea view table then it does feel worth it!

This review was written in relation to a 5* establishment and therefore the criticisms are linked to an exceptional place in which we therefore expect the exceptional... Some improvements are to be made... The review therefore only concerns on these elements, the rest can therefore be seen as... excellent.
Restaurant
This is the 4th season that my wife and I have been to this place and the restaurant has always been a great experience. We have always known dishes that remain simple but always sublimated. Oddly enough, on the first evening the first reaction was mixed and we immediately felt that something had to... change. The so-called "day" entry is simply not up to par. The piece of foie gras is minimalist and what about the duck breast which looks like what you can find in the supermarket. This feeling will be present at every meal and therefore for 4 evenings. The desserts are always very nice but the rest... In my opinion, it is no longer in line with the standing of the restaurant. The dishes are messy, quite ugly for some and tasteless for others. On the last evening, we asked a waitress if the restaurant chef would change... Indeed! He changed a lot a few months ago. It would be interesting to recruit a chef from a starred restaurant...
Breakfast
The "Cap Horn" restaurant is very pleasant with a lovely view of the sea very close to the tables. The only catch is that it's very unlikely you'll be able to get a table close to the bay windows. Indeed, while it is clearly explained that it is not possible to reserve, the reality is the opposite! This is how when we position you at a table behind us, we realize that people have reserved their table for breakfast and in the best location. Damage ...
Care
The thermal baths are always a pleasure and the treatments very pleasant. It could be interesting, however, for explanations of the benefits of the care provided to be displayed in waiting rooms or at least for very pleasant staff to explain at least what benefits can be expected. A downside for the famous “jet bath”. It was very nice to see adding a few drops of essential oil to perfume the bath. Savings at all levels. Damage.
But we will go back :)

The Grand Hôtel des Thermes is a high-class establishment, with high-quality services and many little touches. The staff welcomes you in a very simple and warm manner, without obsequiousness. It is also very nice to meet older staff with a lot of seniority, this proves that this family business pays attention to the employment of seniors. On the other hand, the GHT must improve the rest rooms of its staff and should provide a collective catering solution on site.

Beautiful Belle epoque building on the sea front in St Malo.
The interior is very well appointed and the room was very nice with a terrace and a view looking over the beach.
However the dining is a disaster. A very surly waiter in charge who seemed to find it all very tedious. No suggestion of a welcome-merely a grunt. As soon as we were seated a waiter arrived who did not say "Good evening and welcome". He simply offered us the menus. I asked for aperitives and he took the dinner orders at the same time. The aperitives arrived with some nibbles along with the amuses bouches and the wine for the meal all at the same moment. We did manage to slow things down a bit by lingering over the starters and commenting to the waiter that if we wanted "fast food" we would have gone to McDonalds. However slowing things down was clearly not part of the kitchen's ethos as when the main dishes arrived my wife's fish was hard and dry and my duck was completely inedible. Both had been cooked far too soon and left to "mature". I did say this to the waiter but just got a gallic shoulder shrug which would have done credit to a Parisian street bistro. As we left not a word from anyone. It was awful and not to be repeated.

Response from Charlotte R, Service clients/Réception at Le Grand Hotel des Thermes
Responded 3 Sept 2020
Dear mister H, Glad you enjoyed our location in front of the Sea and Belle Epoque Building. For dinner, we propose three cuisine in two restaurants. Le Cap Horn, with its Sea view and its gastronomique cuisine, is the place to take your time, watch sunset on the beach, enjoy good service, gastronomique cooked meals and good wine. La Verrière restaurant is the full board restaurant for our guests with a faster service like detailled in your comment. I am sorry you didn't went to the Cap Horn for you only one dinner at the Grand Hôtel des Thermes. We look forward to your next visit!

The comfort, soundproofing, cleanliness of the room are impeccable and that's the main thing. On the other hand, the services which should improve the stay were disappointing: Room service: a fish soup arrived barely warm in a bowl just covered on a plate. I'm not convinced of the homemade nature of the soup or the croutons. As for dessert, we only have the choice between three verrines, served in jars, too sweet and stuck with gelatin which give the impression of having been prepared 12 hours in advance to last all day. On the spa side, arriving in boots and coat for a body treatment, I was asked to change in the treatment room where there was not even a bench for changing and only enough space for a few sharp hooks which seemed just right. designed to make holes in sweaters. I am completely in favor of limiting the use of linens and cleaning, but at a minimum if you want guests to do without a bathrobe, you will need a space with a bench and wardrobe in the cabin. In addition, the herbal tea room is closed between 12 and 2 p.m., then from 6 p.m., even though the talasso is open continuously until 7 or 8 p.m. A great lack of water points also near the saunas. Finally, circulation in the thalassotherapy center is a sinister corridor, the floor always wet and slippery. The changing rooms have the class of a municipal swimming pool. The aquatic area can quickly become congested due to the opening to outside customers and the overcapacity sale of entries for the aquatonic area.

The welcome at the reception is very courteous, the "prestige" room has a beautiful view of the sea but the furniture is of the "kitchen" type, the bathroom: classic 3 star.
The “relaxation” pool is great but the water course is full of people from outside.
Cape Horn is frankly disappointing, after the delicious oysters, the really bad "wild" sea bass and the creamy and pretentious desserts.
La Verrière is worse, the meal and the decor.
It is better to walk half an hour and have dinner in Saint Malo, go eat a galette at Grain noir or a refined meal at the “Fourchette à gauche”.

What a disappointment and sadness to have to write this review. We had booked two nights at the Grand Hôtel Les Thermes in Saint-Malo, with breakfast included, which we had paid for in advance.
I was looking forward to this weekend at this beautiful hotel to relax, but it was quite the opposite.
When we arrived, the service was impeccable, with our luggage carried to our room and a perfect breakfast served by excellent staff. However, I was surprised to find that the water had to be paid for, even though a first bottle had been offered to us. I have never seen this in a hotel of this category.
Upon check out we were extremely disappointed, if not ignored. We were asked to pay again for breakfasts, even though they had already been paid. We were then told that it was probably a mistake and that they didn't know how the booking site worked, which shocked us to the core. We only paid for what we had consumed, but the lack of consideration, without even a simple "thank you" for our stay, left us with the impression of being treated like simple money machines. A disappointment 😞

The photo of the building is impressive and gives confidence: we imagine a beautiful establishment, very comfortable, old-fashioned but luxurious given that the prices are very high. The reality is astonishing, and makes you want to turn back immediately. For a room in the city at 450 euros per night, during the week, without breakfast, you sleep in an ordinary room, without any charm, old-fashioned, with unpleasant linen, very thin terry towels, a few tea bags, that's all. The lobby and common areas are not pretty; the music at breakfast is ear-piercing, the breakfast is ordinary and costs 29 euros. the staff is neither friendly nor unfriendly. There are much prettier, neat, cheerful, welcoming and honest in terms of value for money intramural (inside the ramparts of Saint-Malo). That a room whose window overlooks the charming surroundings of Saint-Malo costs this price is completely astonishing. Finally, to walk from this “large” hotel to intramuros, it takes 25 minutes.

The Grand Hotel des Thermes is fantastically located on the Plage de la Hoguette in St Malo. Beach walks to the city (Intra Muros) and tide watching are unique. It is an optimal starting point for a visit of Mont St Michel. The hotel has a nice beach bar with an interesting menu. We met very attentive staff (reception/janitor) – but also other less interested.
In a way, the hotel seems to have had its best years. It often feels like a dusty retirement home. This is especially noticeable in the restaurant “La Verrière”. In this room, the watchword seems to be an expeditious service and not "WELLNESS AND TRADITION CUISINE" as mentioned on the website. The value for money is no longer correct. The five stars are fading sharply.

Where to start !
SO DISAPPOINTING!!!
Sea view room with a view also of the cobwebs which did not date from yesterday.. A room where the decoration and the quality of the linens remain basic.
Toilets with stained tiles and marked urine odor.
Room service, or the details at home are not part of perfection! (forgot the cleaning supplies in the bathroom)!
Perfection is not a detail but the detail makes perfection and believe me, that in no way corresponds to the quality of service of a 5☆. A breakfast service where you have to wait in line for a table to become available! and nothing exceptional in terms of the dishes offered! (Very traditional). Now let's talk about the gourmet restaurant!! I have rarely seen such pitiful French service!
The master sommelier does not introduce you to the grape varieties and even less makes you taste the wines. Our table manager barely took the time to listen to our requests and took the liberty of asking us, I quote "who is the dish for?" while serving Mr first! A smile is not required either! As for the gourmet restaurant, how can I put it! DISAPPOINTING ! A menu made on profitability while forgetting the flavors and emotions that a chef must share with us! No culinary identity!
Now let’s talk about thalassotherapy!
A station hall, waiting rooms full to bursting where everyone waits with their little piece of paper, waiting for their treatment.. The Social Security of Terms!
A one-hour treatment that ends after 40 minutes! No offer of a relaxation room or “Au Suivant” herbal teas! So disappointing! Having done the Tour D'Argent, the Ritz, the Grand Hôtel de Cabourg, the Normandy in Deauville, I assure you that the services sold to you here do not in any way meet the requirements and luxury of a 5 ☆.
I am extremely disappointed and if I had to return to the Michelin Guide, I would tell them to run away!!!!!!
Then what can we say about the Gourmet restaurant!!
