We visited The Caves in January 2017. Before our arrival, we had planned to do a private cave dinner. Upon arrival, we were given a tour of the property which included a tour of the caves. We thought the caves were a bit smelly, so we decided against the private cave dinner. I don't know if something weird was going on that particular day or what. That was our experience.
First side note, I think they will set a private dinner up for you anywhere on the resort property. So, if you are not happy with the caves, you could request another intimate location on the property. We saw one or two other couples elect to do that while we were there.
Second side note, the location where regular dinner is served is absolutely beautiful / romantic. Dinner is served outdoor on a second story balcony overlooking the ocean and the lighthouse. You don't have to splurge on a private dinner for the dinner to be beautiful and romantic.
