How accessible are mountain bike trails?
What are logistics of quality downhill mountain bike rentals and car / SUV to transport to the trails?
What is climate like over thanksgiving weekends?
St. George is a great place for MTN biking. I'm an avid rider and get out on the trails a couple times a week in the spring and fall.
There are great trails here on the west side in Snow Canyon state park and the surrounding area and even better ones between here and Zion. Snow Canyon is only a few minutes from us here at Entrada. Gooseberry Mesa is the famous one but there is an entire system with literally hundreds of miles.
You can rent bikes here in St. George but also in Hurracaine UT (Closer to gooseberry) and in Springdale outside of Zion. There is no riding actually in Zion NP but the area between there and St. George is a wonderland.
I don't know about rental cars with bike racks, you'd have to check with the specific rental car companies, or just rent a pick-up truck. The vast majority of trails are accessible without 4WD or high clearance.
Weather in November is great a little chilly at night (Lows in the upper 30's) but Highs in the day are upper 50's low 60's , perfect MTN Bike weather in my opinion.

The Inn at Entrada
the only bike trails I am aware of are in Snow Canyon and on trails on Bluff Street also known as highway 18. Yes there are bike rentals in St George but I do not know of any car rentals with bike racks. We usually go in February when the weather is wonderful. Im not sure how the weather is in November. The inn in Entrada is a great place.
Weather in St.George is regularly in the 70`s - 80`s during the day in October-November, at least when I have been there. There are a few bike shops in town that rent bikes. One I believe is Red Rock Bicycles on Bluff. They have Specialized MTB`s. There is one other bike shop off 100 down near center of town although the name I cannot remember at this time. They seem to have a variety of bike brands. There are many paved trails through out St.George that will link you to various other dirt trails. You can drive over to Springdale on your way to Zion and there is plenty of riding there also. I believe the RedBull challenge has been held out that way. Make sure when you go that they are not having other events scheduled, Hotels can be difficult to come by especially when the Huntsman Games are going on. We have been to that area more than a few times in the past couple years and always have fun. If you make it to Springdale make sure to visit Oscars for eats. very tasty!

Ditto, Thanksgiving weather. We were there in late Spring, and it was COLD, we had a couple of good electrical storms, and some wonderful sunny days.
