She is a delight to spend time with and provided us so much information about the market, about Hanoi and about Vietnam in general. We thoroughly enjoyed the four hours spent with her touring the markets. 4 am is early but the tour was definitely worth the early morning. The food tastings were delicious and left us over-full. Even though they were "tastings" the portions were large and filling. The tour can be up to 8 people but thankfully it was just my friend and I on this morning. I would definitely reach out to Chef before booking to see if there are others already scheduled because I can't imagine doing the tour with 8 people. We started with the most amazing fried spring rolls and shrimp pancakes and from there mixed eating delicious food with seeing the main sites of The City. Ms. Linh and her team were fantastic drivers; I never once felt unsafe while riding on the back. Also, great seating next to the train line. Mai was friendly, knowledgeable and took us to some awesome street food vendors in the old quarter. We experienced a variety of dishes and Mai even took us to an extra place so we could try one of our favourite Vietnamese dishes (Banh Cuon).
