We are a family-owned business located in Dripping Springs, TX committed to supplying the highest quality olive oil produced in the United States. Our certified organic olive orchard features a Tuscan-inspired mill house, a state-of-the-art Italian olive press and a large tasting room.

We sell four different types of Extra Virgin Olive Oil as well as traditional and fruit-infused balsamic vinegar. Buy the products individually or mix and match several products in a wooden gift box. Olive tree adoption is available and allows you to customize your labels to enjoy your private brand of olive oil all year long! Looking for an amazing place to have an event? We offer complete event planning for any occasion.

We taste our olive and balsamic oils in addition to over 37 wines. The best part is we change out some of the wines weekly so that you can try wines from all over Texas. We encourage people to come out and find a nice quite spot to enjoy the beautiful orchard and hill country views!

A scenic drive along Fitzhugh Rd. in Dripping Springs will bring you upon an attractive Tuscan style building that houses the Texas Hill Country Olive Company. Inside you will be able to sample a variety of flavored olive oils and balsamic vinaigrettes, as well as purchase unique items in the gift shop. The bistro offers a small menu with appetizers,... This is olive oil at its freshest, and you get to sample a wide range of products in a friendly environment that's like a winery tasting room. I never get tired of bringing guests here to sample the different products, and only hope next time I can plan my arrival to finally get on the tour! The restaurant serves some... More

We took my boyfriend's parents here for the day--it's a nice drive from Austin. The gift shop is the main attraction where they sell all their oils, vinegars, and other local products. There's a cafe with sandwiches, small plates, drinks and wine (and the food is excellent!). I would save the $6 on the tour, because it's not much of... More

There's a bistro as well as the gift shop. We tasted all the oils and vinegars, bought some of the garlic infused oil. We enjoyed it!

The folks were wonderful and they had dozens of things to try. The oils and vinegars were tasty, but felt they were overpriced.

Learned a ton about olives, olive oil, and what it takes to grow and process the olives into oil. They have a nice gift shop where you can taste the different oils and balsamic before your commit to buying.

Olive trees, olive oils, vinegars, wine, and a nice little bistro. Ok, they have beer too. See my pics for a lot of good info. Definitely try the gelato. The staff is very friendly as well. Lots to see in the store. I am so glad we stopped.

Hi Rebecca T., I'm so sorry you drove out to find us closed. Could you please tell me what day you tried to come out? The only day I'm aware of that we closed was a Sunday due to bad weather and some issues with water getting into the building. We put a sign on the door and announced on... More
