I agree with those that suggest three or four days. You mentioned checking out the Gunflint Trail... An excellent choice, but there is basically only one (paved) way in and the same way out. Driving up the Gunflint from Grand Marais, having lunch at one of the fine resorts located near the end, and returning to Grand Marais is a full day trip in itself.
