About
Stubborn German Brewing Company opened in April, 2016 and offers house brewed authentic German and American style beers, along with a huge bourbon selection and a fun, cozy atmosphere. Stubborn German does not serve food, but you're welcome to bring food in or order from some of the local restaurants. The brewery also serves mixed drinks, wine, soda, etc. and has a large board game selection, which is always a hit! Supervised children are welcome. The open-air concept of the space let's you see the entire brewhouse operation. We look forward to serving you!

By chance, my wife and I who are both of German descent discovered the Stubborn German via Google, so we decided to swing in though it was a little out of the way from our destination of St. Louis. We are very glad we stopped in, as we found the Stubborn German offered a great variety of beers.

We started with a flight each because our flavor preferences vary. We both enjoyed the Stubbornfest, an Octoberfest type of beer available year-round, and we LOVED their barrel-aged imperial stout and their barrel-aged Scotch ale, and we sampled other types too. We were excited to see they offer a rauchbier (a German style smoked beer), though we found it to be too light on the smoke.

They offer canned beer to go, and their cooler was very well stocked with a wide variety of their beers. They also have some cool merchandise (koozies, shirts, hoodies, glasses, and more) and a fun logo. Given our stubborn German heritage, we left with numerous liquid and solid souvenirs.

The atmosphere was very welcoming with lots of seating and lots of customers who were ready to engage in conversation.

Their menu does not include food and we had already had dinner, but they do allow you to carry in or order in from places in town.

Located on the square in downtown Waterloo is where you will find various restaurant’s, Hopskeller Brewing Company, and just a short walk from there is Stubborn German Brewing Co. A really fun, laid back, easy going atmosphere with some traditional German beers with some modern day beers as well. The Schitzengiggles, a dunkel beer, with notes of roasted malt and bread is about as German as you can get. The Old Ledger Lager is as clean and crisp of a pilsner as you will find anywhere in the bi-state area. For those with an adventurous side check out their barrel-aged series on tap and to go. Our trip they had a Bourbon Barrel-Aged German Chocolate Cake stout with impressive notes of coconut, chocolate, and caramel from the bourbon barrels. While the abv clocked in around 9.3 it drank super smooth and easy. They do various barrel-aged styles year round and with their core beers it was a great place to have a few beers. Kid friendly no food but you can get food from the various restaurants on the square delivered. $$

Great experience. I’ve been wanting to try the Stubborn German for months but just haven’t had made it down to Waterloo in a while. I had one of their IPA’s and it was great…very smooth with a great balance. We will certainly be back!

This is an amazing place with excellent self brewed beers and an amazing and well priced bourbon selection. I could have stayed all day and tried everything and emptied out the back account doing so. I enjoyed supporting the other surrounding food businesses and bringing the food to here and being able to enjoy their drinks and then playing games and watching sports games on tv. Great atmosphere and staff.

I will definitely return for more tastings.

Beer was great and reasonably priced , Bartender was really friendly. Customers were great to talk to. Just a great visit, Would highly recommend.

Ordered in some Imo's and enjoyed beers and bourbon inside the bar. My wife had the Strawberry Hefeweizen while I enjoyed a number of bourbons, from Old Forester Single Barrel to a terrific Elijah Craig pick. Chris and Tammy are the best and you WILL enjoy the atmosphere and the beverages. Check out the historic decor while you drink. (Great BBQ next door btw) PS: We have been back to pick up carryout beer recently as well as a George Remus bourbon. You really should just go and support these guys.

We've visited here twice, and enjoy the offerings. The brewery occupies a beautiful old brick building on the square, and the interior is quite attractive, with lots of exposed brick and wooden tables. It's your stereotypical craft brewery interior, but I like the look. I find most of their beers to be above average. The fun is trying all the kinds on offer, and I discovered three that I really liked this time. The Zero Dark 30 was a pale coffee stout, the blueberry wheat was excellent, and the El Diablo was a crazy strong spicy dark beer with plenty of chocolate. The service is very friendly, and the beer is quite cheap, especially if you order half pints to try a few kinds. Flights are offered, including one that lets you try all 26 beers. I didn't feel up to that. For pleasant weather, there is a small patio in front.

Nice little place on the Waterloo Square. Good selection of beer but I would definitely recommend the Octoberfest. And try it in a Liter Mug! You'll feel like a real German at Octoberfest.

We came here for a Whistlepig tasting the bar was putting on. I loved the atmosphere here. Exactly how a bar should be. Clean with a well stocked liquor shelf. As soon as I walked in I could smell the beer that was brewing. The owner has done a very good job with this bar.
