The small cooperative makes cheese from the milk from just five farms surrounding the dairy. It’s a one hour car ride from Bologna on narrow and steep roads - we did it in winter and the mountains were so beautiful. Caseificio Pieve Roffeno is around a 45 min drive out of Bologna . Located in the mountains it's a beautiful rural place . Tours start at 9.30 which is prime time to see the cheese being made in 1000l vats . Francesca our guide was great & spoke good English . All aspects of the production are covered & it ends in the fabulous maturing room stacked high with cheese . After the tour we were given an excellent tasting of cheese & also some fine salami . There is a perfect shop to buy their cheese & salami's . Having been on many tours like this around the world I would say this was one of the best & my teenage sons would also agree .
