If you want to see the canal house, take a walk through the city centre and you will see a lot of all te canal houses. I must to see if you visit Amsterdam

One cannot reach the Danube by water from Amsterdam. One must travel overland into the Austria/HungaryChech region to reach the headwaters of the Danube. The Danube flows into the Black Sea.

I went with an outfit called Canal Company (canal.nl). That particular trip was not a hop-off and hop-on type. It began and ended at the same spot.

Good question. It's a bit of a mystery. I suggest showing the ticket office a photo of what you want and getting an assurance from them that will be the kind of boat you'll get. They can be pretty shady from my experience... More
