Melanie Seccani is an international professional chef who has studied cooking all over the world, worked with some of the top chefs in the world, and is well known for her Tuscan cooking (amazing!) and courses. My husband and I had the best class with her. It far exceeded our expectations. The highlight of our trip! She was infomative, engaging,... More

My family of 8 people had a day long cooking class from Spice Lab. It was much more than a cooking class. It was a cultural learning experience also. The day began with Melanie and her husband meeting us to tour the market. We tasted Balsamic vinegars and fresh pressed olive oil. We learned about seasonal vegetables and cuts of... More

In short, cooking with Melanie was unbelievably delicious. She visited my family in Michigan, and for a few evenings, I thought I was in Tuscany. Making fresh pasta (which my mom devoured raw) with truffles, ravioli with stuffed with pumpkin, and eggplant hors d’oeuvre to die for, had me trying to convince her that Italy and Michigan were not so... My father and I attended a private cooking class in the owner's Tuscan kitchen, and it was, by far, the highlight of our visit to Florence. Melanie is a gifted teacher whose passion for Tuscany is expressed through her food and instruction. Being in her kitchen and preparing the food with her was like being a guest on the Food... More

My husband and I took a private cooking class out in the Olive Grove in late August. . .We did the bistecca menu, which included making fresh pasta with fresh pesto, eggplant rolled with bufffalo mozzarella and a prosciutto type meat, and making fresh gelato. . .We started the class out just wandering around the grove, picking fresh fruit to... She was absalutly amazing, she came all the way to Michigan and taught us how to make whole wheat Toglitelle. She was amazingly friendly and had alot of hands on stuff for us to do. The whole family had a great time. Defintly planing on using these skills in the future. I would highly recomemd her.

I surprised my wife with a class with Melanie in her family's olive grove at the end of September. I had been communicating with Melanie quite a bit by email leading up to the class. She gave me all the details of the class and what we would do and cook. She picked us up outside our hotel in Firenze... More

We recently spent a half-day with Melanie from The Spice Lab touring the Centrale Market and cooking in the Olive Grove. We learned lot of tips in the market on selecting fresh products, and made a delicious stop for cheese and appetizers drizzled with balsamic vinegar! She then drove us out to the family olive grove where we learned to... More

After reading many reviews of the Spice Lab I signed my husband and myself up for an evening cooking class with Melanie. Melanie has 2 Culinary degrees, her husband has one, and her father-in-law is an accomplished chef,(he even prepared the bean packet for our bean dish). Melanie was very responsive to our questions prior to reserving our class, with... More
