About
The Caves Bailly Lapierre are located in the heart of the Auxerrois, above the town of St Bris le Vineux. Created in 1972, the Caves Bailly Lapierre gather together 71 winegrowers who sell their cremants, the Caves' specialty, and wines on site. Dug deep in the stone, the wine caves are used as a cradle in which to create cremants. Guided tours of the caves are organized every day from 2:30 to 5:30 pm, in july and august, and from 3:30 to 4:30 pm on weekends and bank holidays.

Not the easiest place to find by signage (or lack of it), but once there, you literally drive into this place. Entry to the cave (by car) and parking in the dark (interesting), then walk on over to the gigantic bar for your tastings. We had a wine pourer who was pleasant, but didn't really provide us with enough information on each tasting we tried. The cremants (sparkling wines) were nice as was their whites. Bottles exceptionally well priced. English tours at 330pm if you desire. The area along the river is perfect for a picnic afterwards.

A fascinating experience from beginning to end. There must be wide variation between the different guides because we had a better experience than some other reviewers here who mention weak English and insufficient focus on winemaking method. We were fortunate to have Sylvia and she was excellent in every way. She's a German who lived in Michigan for a long time (she married an American) and now lives here, so she is fluent in all three languages and her English is fantastic. Sylvia gave a LOT of information about the winemaking method. It was also really fun and different just to be inside the caves for so long. It does get chilly, but we liked it and found it a fascinating environment. The history of limestone quarrying in France was really interesting; we were grateful that Sylvia added that information. And the tasting afterwards was great. Beautiful big room, generous pours, pleasant wine educator Bruno (though his English was not nearly as good as Sylvia's) and delicious variety of cremants. We like our champagne really dry, so we loved the super-dry Ravizotte, which we feel compares favorably with Veuve Cliquot.

Our visit was on a Monday (Mondays are slow), and moreover it was late September, kind of the shoulder season, so our little party of three got our own a private tour. Had there been other people on the tour who spoke a different language, we probably would not have learned so much because Sylvia would have had to explain things repeatedly in different languages, which naturally would have rediced the level of detail. Also, it was clearly our good fortune to get Sylvia at all; she has to be their very best English-speaking guide and they are lucky to have her.

Please understand that the Bailly-LaPierre winery simoly does not have the infrastructure to deliver a consistently fabulous tour experience to everyone. They have great wines and a lovely tasting room, but they have to serve all tourists no matter what language, and they are not in Champagne, so there is not enough demand to establish a dedicated English tour, German tour, etc. When the group requires the guide to speak two or more languages, naturally it cuts down on the level of detail and reduces the quality of the experience.

For the best quality experience here, go on a slow day (e.g. Mondays) in the off season and cross your fingers that you get a good guide in your language. At this time of year (late September) there are only two tours a day, 3:30 and 4:30, and it is not crowded at all. This increases your odds of having a good experience. But don't NOT go in the high season. Definitely go - just manage your expectations. Learn what you can, enjoy the cool temperatures, and buy fantastic cremants for under 10 Euros!

This historic cave was used to hide a stash of local wines during WWII from the Nazis.
It is very trendy as far as its use today as a large wine tasting room for local wineries.
The drive through the surrounding area was well worth the end result.

Cool wine cellar in a cave. Definitely worth the stop to learn a bit more about how wine is made, and to see the literally millions of bottles stacked up in the dark, slightly spooky caves while it ferments. At the end of the tour you can taste as many of the wines as you like for free, and purchase them if you like. The local speciality is the excellent Cremant de Bourgogne - a sparkling wine which matches champagne and is far cheaper.

We were canal boating and stopped off here. The short walk up the hill was well worth it. The bubbles were sweet and the 2011 Irancy was the pick of the reds. The caves were a welcome relief from the searing sun!!

Unfortunately we arrived to late for the tour. We did get to taste some of the wines and purchased a bottle to bring home. This is the coolest wine place we've been to. To drive your car into the cave, park and find a huge cavern filled with wines to taste. Something completely different and unique.

Don’t miss visiting if you are in the area. We parked our boat at Auxerre and road our bikes the 12ks along the bike path which was fabulous and eventually reached the caves but it was a bit of a steep walk to the entrance. (Two friends had to taxi it in and it cost them €30 each way so beware)...the tour was good and it was interesting to hear about the wine and it’s history. It’s about 12 degrees in the cave so take a jacket. The tour takes about 30 minutes then you can go back and have tasting and the glass they give you for the tastings is yours to keep. The tour only cost €6 each. Very well worth it..

Our timing was unfortunate as no tour was available when we arrived. We did do some tasting though and came away with several bottles of Cremant, Rosé and dry which unfortunately have now all been consumed. Very light and fresh.

We set out to find the Caves and got lost then came across them by accident! Very different place to visit.
The sparkling wine is absolutely gorgeous, we only bought a couple of bottles, big mistake! We should have bought a couple of cases, very very good!

We last visited les Caves des Bailly Lapierre some three years ago , and enjoyed it so much that we returned with friends . However , summers in France do seem to becoming warmer , and it was 33C as we walked up the hill to the Caves . Originally stone quarries for the many limestone buildings in Paris , then mushroom farm , they have only been producing the famous " Cremante de Bourgogne " since 1972 , but hey now have more than seven million bottles laid down , 70% of which is exported . They still do a guided tour in French , but one innovation is an English audio guide which synchronizes with the French guides explanation . All in all , excellent value for €6 which includes the tour , two glasses of cremante , and the opportunity to keep your flute ( saves on the washing up too ! )
