I have done this day trip a few times over the years and enjoy the ferry ride over and the gorgeous views from the ferry as well as the top of the volcano. It's an interesting hike with lots to see and learn.

Shoreline of Rangitoto is volcanic, so not suitable for swimming unless you are very brave! Plenty of bayside beaches around Auckland Harbour - take your pick

Yes, but bring a raincoat and warm clothes. The paths are solid so it is not muddy.
