I have done at least 3 other cooking classes in Italy, but never have I felt the passion and understanding of true local ingredients making the dishes. Giacomo took the time to explain why he cooks a certain way with only particular ingredients. We spent 5 hours with him and his wife Cristiana preparing and then enjoying our 5 courses. Giacomo's passion for quality food and wine resonated to his enthusiasm for sharing his knowledge. The class is not only to present a proper way to prepare authentic Tuscan cuisine, but it also served to enlighten us to the true meaning of quality foods and wines. We thoroughly enjoyed the 5+ hours of learning, experiencing and eating the results of our true hands on experience of his kitchen. The atmosphere of the the class deserves mention as well. Located on his organic farm, we immediately felt welcome by Giocomo and his accommodating staff who tirelessly supported the whole preparation and meal. The meal that we prepared in our Le Caggiole cooking class (pappardelle, gnocchi, Chianina, and tiramisu--secret family recipe that Giacomo and Cristiana share). I had so much fun, I swapped family travel mates with friends and participated in the Le Caggiole cooking class eight months later. Le Caggiole cooking classes are the real deal: a family affair who grow, inspect, and acquire the food supplies. Of course, the class is taught and served by the family also, whose Tuscan roots extend more than seven generations. Giacomo cares about quality ingredients, and it tastes like it! He believes simple, quality ingredients make the best food, and prepares a meal plan that allows one to spend time enjoying guests, and not sweating in the kitchen. The classes are small enough that Giacomo and Cristiana can demonstrate techniques and guide you, so you have the confidence to make your own perfect five-course authentic Italian meal. Having dreamt of taking a cooking class at a farm in Italy for over 20 years, I could not have asked for a better fulfillment of that dream. Giacomo curated a five-course tasting menu using the freshest and simplest of ingredients. His knowledge of ingredient selection was invaluable, teaching us how to choose the best products and what to look for on labels. We had the joy of making pappardelle and gnocchi from scratch, along with their accompanying sauces. Giacomo's cooking techniques were a revelation, making the meat incredibly tender and the entire meal a delightful surprise. To elevate the experience even further, Giacomo expertly paired each course with an appropriate wine, providing us with a mini wine pairing class. This added a whole new dimension to our understanding and enjoyment of the meal. Cristiana was always nearby, ensuring our workspace was clean and organized, adding to the seamless flow of the class. The warmth and hospitality they extended to us were unparalleled. Their beautiful home, which Giacomo's family has occupied for seven generations, provided an authentic and charming backdrop to our culinary adventure. The food itself was extraordinary. My husband, who previously disliked gnocchi, devoured the entire platter, remarking on its perfect texture. The tiramisu was a highlight—so light and fluffy, unlike anything we had ever tasted. The best Italian experience we could have asked for. Giacomo and Christiania welcomed us into their beautiful home and shared their philosophy of Family, Tuscany and their passion for local produce, learned over generations.
We made two beautiful pasta dishes (from scratch), tiramisu and learned about the Italian approach to good quality local food and produce. Lunch was paired with perfect wine for each course - we can’t thank Giacomo enough for giving us a glimpse of Tuscan life - an incredible experience that we’ll remember forever!

We had a lovely experience with Giacomo in the cooking class. From our welcome into their beautiful farm, to how intentionally the cooking space had been set up for us, it was clear how much he had thought through the whole experience. We learned how to make two delicious types of fresh pasta & tiramisu (and got to eat the dishes we had prepared at the end). In addition to the actual cooking instruction (which was truly expert), we received so much information on the importance of ingredients, cooking with the seasons, and even some stories about Giacomo’s grandmother & family cooking traditions. At the end of the class, we were served our pastas with delicious freshly-made sauce by Giacomo and his family (who were helping throughout the class), along with some beautifully paired wines for each course. Another nice touch was that Giacomo took photos of us throughout the class and sent us these photos afterwards, allowing us to focus entirely on the class without having to capture the moment. We thoroughly enjoyed the class and would highly recommend it to anyone looking to experience something fun, informative, and special. Giacomo is a true professional and has so much knowledge to share in this cooking experience.

Giacomo and his family gave us a warm welcome when we arrived and started to introduce us to their home and the course. The course was fantastic and very educational! Giacomo knew his cooking and we learned a lot by watching him and trying by ourselves. The pasta we made tasted amazing and the wines that Giacomo paired with the different types of dishes was also very tasteful. We also got to taste our own made tiramisu that was so authenic and good. We are definitely bringing his knowledge back to Norway and thought it was really fun to taste our own making. If you want an authenic and unique experience, we really recommend Giacomo’s cooking class.

Giacomo is very knowledgeable, but do keep in mind you will barely get to cook in the cooking class. You will knead pasta and peel potatoes, also will probably roll gnocchi. You will not be cutting or chopping, you will not use the stove or the oven. You will watch the chef cook for a long time while he speaks about ingredients.
The atmosphere is quiet and unwelcoming, even awkward. you are not allowed to have your phone with you and take photos. Jokes and laughed are frowned upon.
If you imagined having a good time cooking with your friends and family - this is not the cooking class for you.

The first thing I want to tell everyone is that some of the previous reviews (and probably some of the ones to come) were written by people who were with us the same morning.
The cooking class you booked is a format that has remained pratically unchanged for some years: even all the dozens and dozens of previous reviews contradict you in every way.
As you said, you decided to left the class after about 2 hours, however the other participants thanked me and said goodbye almost 4 hours after your departure.
An honest review is the story of an experience, not a film you created in your head.
Sooner or later you will realize that by leaving suddenly, you have just missed an opportunity!

Giacomo & Cristiana were fantastic hosts. We enjoyed learning how to make two types of pasta and tiramisu. Giacomo was a great instructor! He explained how to properly make the pasta, but also how to make delicious food with simple ingredients. After we completed making the pasta, Giacomo cooked for us and paired beautiful wines with our meal. His knowledge of food and wine is extensive, and I love that he shared it with all of us.

If you are looking for a true authentic Tuscan cooking experience, this is the place to go! Giacomo shared his family history and passion through his cooking & instruction. From ingredient selection to technique, we learned much of the “trivial” details to make homemade pasta from ‘good’ to ‘excellent.’ Giacomo’s preparation of our meal and selection of wine was outstanding. Enjoying tiramisu on the beautiful patio at the end of our meal was an added bonus! Thank you Giacomo & Cristiana for an unforgettable experience!

My Partner and I thoroughly enjoyed our recent cooking class experience with Giacomo & Cristiana. A small group of 3 couples (including us), at their beautiful property, we were treated to a wonderful morning of cooking and eating! From the moment we begun to the end of the class, we were lucky enough to gain truly Tuscan experience - sharing his passion & knowledge for quality ingredients, love of cooking, the local areas and connection with people through food. The authentic experience of cooking was followed by a special lunch made using our made pastas. Absolutely delish! These 4 courses were paired with Giacomo’s terrific wine choices which he presented professionally. It was a fantastic experience and we both thoroughly enjoyed it - a highlight of our time in Tuscany!

This was a tremendous day with Chef Giacomo. You can feel his love for the traditions passed down from his grandmother. He is not just instructing, he is teaching and coaching with great passion. Every ingredient is organic and the skills are easy to bring home. As he says, great food does not have to be complex, just done with “Great Ingredients and Great Passion”

This class was absolutely wonderful! Giacomo and Cristiana were lovely (and entertaining) hosts and Giacomo is a great teacher! His knowledge and passion come through in everything he shares and teaches. Not only did we learn to make incredible pasta and tiramisu, but we had fun with the other 6 people in this small class and we learned so much about the ingredients, the techniques and the background behind why Giacomo cooks the way he does and why Tuscans cook the way they do. After making the pasta and tiramisu, we sat down to a delicious lunch, eating the pasta we made with sauces Giacomo made to go specially with each pasta, paired with wines chosen by Giacomo. He explained how he made the sauces and why he paired certain wines with each course. I was excited to take this class and it exceeded my expectations! I HIGHLY recommend it!!

This cooking experience with Giacomo and his wife Christiana went far beyond our expectations. Thanks to Giacomo’s knowledge of traditional Tuscan cuisine and his passion for using only the best local, organic ingredients, we were able to prepare two different types of pasta from scratch. For dessert, we were able to make a delicious tiramisu. Giacomo’s step by step teaching combined with his explanation of the importance of seeking the best local ingredients made the day fun and educational. The meal that followed included three courses served with wine pairings, followed by the chilled tiramisu. An unforgettable day,
