During this basil-scented tour we will prepare together one of the most delicious dishes of Ligurian traction, tagliatelle with pesto. Antonina of the Antica Locanda Luigina, in collaboration with Alberto of the Slow Food La Spezia conduct, will offer you this practical meeting, making available the necessary equipment to make the pesto and the local savoir fair. After selecting the basil leaves, you will be shown how to use this classic tool for the preparation of pesto, the mortar, while listening to interesting anecdotes and curiosities about the history and tradition of the pesto and its components. Once the pesto is prepared, we will begin to knead first and then cut the noodles. At the end of the lesson, you can enjoy the fruit of so much work by tasting the pesto prepared with your hands and cooked by our cooks in our kitchen; a tasting will also be served consisting of a platter of cured meats from Castiglione Chiavarese and cheeses from San Pietro Vara, all accompanied by organic white and organic red from the Nardi di Ortonovo cellars.
