    What to Expect
    If you've chosen the 4.5-hour class, head to the cookery school in the early evening and meet your instructor. First, plan your 4-course dinner, and then make a start as your instructor shares helpful tips on traditional French cooking techniques.

    For a more complete cookery experience, upgrade to the 6-hour class. Begin in the mid-afternoon with a visit to an open-air food market near Paris' Latin Quarter. Wander the stalls and markets with your instructor and admire the range and quality of produce on sale. Pick up the ingredients you’ll need to prepare your meal, then head to the cookery school to start planning and cooking.

    During your 2-hour cooking time, follow your menu plan and enjoy a glass of wine or two as you work. With your 4-course dinner ready, head into the dining area with your fellow cooks to enjoy the delicious meal you’ve prepared. With half a bottle of white and red wine to complement the flavors, sample one French cheese and learn the fine art of pairing food with wine.

    After your meal, listen as your host sheds light on the traditions and customs concerning French culture and cuisine. Food is a huge part of the French national identity and plays a strong role in the country’s history, geography and sociology. You will receive electronic copies of your recipes after you leave the class.

    Bonjour Helena C, I will not hide from you that the 3 stars review is something which hurts a bit, given what you state, and given what happens in our classes. So I will address some of your points - in details - now because it seems you missed quite a few things which were happening during your class. But first, thank you for explaining that your instructor was very friendly and knowledgeable and that the food was delicious (possibly the most important from a cooking class) - and that you learned a lot about French cheese (and actually other produce). Indeed your chef did give you and other participants the opportunity to have some time to do some shopping at the market as there are great produce there to take back - but he certainly did not stop you following him. Now to your points about the 'good class for inexperienced cook': yes, absolutely this is a GREAT class for an inexperienced cook. But we believe (and have recevied countless feedback about this) that this is also a GREAT class for experienced cooks. So maybe you are VERY experienced (I mean, like several years in a professional kitchen) or maybe somehow you did not appreciate some of the teaching for what it was. And by the way, I am sorry you thought this was not as hands-on as you expected - but you actually prepared everything you ate. And indeed there was time when you were not 'cooking' but learning about how to cook from a very experienced chef. So to be more specific, let me explain in some simple examples (and certainly not covering all that you did in almost 3 hours in the kitchen) the kind of things one could have learned. What one of the things we like to do is ensure that at the prep stage, we "divide and conquer" so that not everybody peals one potato or peels one onion (these are examples). And we use this momemnt to try to instill the concept of economies of scale in the kitchen. And this starts with ensuring you do the same motions across all produce. So to be clear: when you have to dice 10 onions, you cut the base of ALL of them first. Then you slice ALL of them in half. Then you peel ALL of them (keeping the stem on) and then you apply the "locomotive" motion (which your instructor showed to everybody) to all them while keeping you working surface clean after each one. Of course, if you do not believe you learned something by learning this, and continue to peel your onions before cutting them in half, if you do not make a flat on the onion, if you do not apply the locomotive motion, and if you have not learned how to organize yourself in the kitchen in what seems a very simple exercice, indeed you did not learn much. But in our experience, people who do not consider themselves so 'experienced' find a lot of new tips in listening to the simple explantations of a Chef who in your case was a chef with 20 years of experience, of which half were spent in Michelin Starred restaurants. Regarding the watching part, same idea: when you reduce a sauce, you can ask a client to watch it, and that might have made you feel like you were 'doing more cooking' by steering a pot. But your Chef explained that actually steering a pot serves very little purpose (but keeping things from attaching to the side when you reduce a sauce is important because otherwise those components develop bitterness) and actually explained at a high level the physical chemistry of the reduction, so that you know how to reapply it back home. And this is a choice we will make in every class: we will teach and share our passion and knowledge. And to be honest, most people understand it - and realize that while their instructor made it seem all simple (a sign of good teaching in my view), you actually (could have) learned how to better work in a ktichen and produce ... delicious food (as you rightly said).
