      Best bit!
      I booked a tour that included the cheese, ham and vinegar and this was my favourite bit! The family here treat you well and like proper guests so hospitable! The balsamic vinegar (especially their red top one) is liquid gold I could have downed the bottle! Very informative and fun!

      Memorable Experience!
      This tasting was much more than that. We arrived and were shown around the property and vineyards outside. Once in we had a tour of the cellars and process of making. It isnt a massive production and is family owned/run so it feels very intimate and special. We quickly realized we’ve never tasted real balsamic after coming here. An array of local aperitifs were set out with the tasting.. salami, 2 different ages of parmesan, unforgettable ricotta with saba, and chocolate cake made by the family. Everything was great.. atmosphere, tour, and of course the taste of their vinegars. Go!

      What a fun and interesting experience this was....One of our favorites in Italy
      This was one of the best experiences we had on our trip to Italy. Marcello Cavedoni came out to greet us as we pulled into the driveway as if we were family. As we walked inside, we were transported back in time to a life where family is revered and where working hard together every day in the vineyards and surrounding lands, reliably brings success and gratitude. This is a magical place where they turn grapes into wine, and wine into the best Balsamic vinegar in the world, otherwise known as "Liquid Gold". We loved our Tour with Marcello. He obviously is very knowledgeable in the business, being a 7th Generation Balsamic Vinegar manufacturer in his family. We were touched by how much love they put into the making of their product, and how the family is always part of the process every day. The tour is a couple of hours and I highly recommend bringing your camera to document the memories you will take away from this experience. After learning all about the differences in Balsamic Vinegar and how they are made, I don't think I can ever go back to any balsamic vinegar that is less than the DOP quality ever again. I love that it is naturally made with organic ingredients, and the flavor is out of this world. And its all in the details that make the difference. Details that this family has mastered over generations. Thank you Marcello for the wonderful tour. You are an awesome teacher and a wonderful loving husband and father. We are so grateful to have been able to spend time with you.

      What an amazing place!
      Who knew there was so much time that went into "real" balsalmico! And this family has been doing it for many, many generations. In fact, there is a new family member, just a few weeks new, and her "battaria" had been set up so she'll have her own part of the tradition. The tour was wonderful; we were fortunate enough to have a tour with Marcello, the son of the father and son team who currently run the operation. So personal, and welcoming, it was one of the highlights of our entire trip. Do call ahead for reservations, just to be sure they can give you their time. We had some items sent home and their shipping was amazingly quick. Mille grazie!

      Great Cultural Experience
      We toured the Antica Acetaia yesterday and found it to be a great cultural lesson. We will never be able to buy our balsamic vinegar at a grocery store again. They give a great overview on how to make the product, what to look for when you are buying it as well as providing samples with explanations of what to taste. Great food and plentiful wine!

      Amazing, absolute must-see
      We had an amazing time on this tour, and in our opinion, it was definitely worth the money. We were warmly greeted by our host, and offered a coffee and a few minutes to relax. The tour itself was very informative and showed every detail of the processes involved. It was an eye opener in terms of how little we actually knew about balsamic vinegar, and how we are used to the regular factory produced products that we find on every restaurant table. The tasting was great, with some salumi (cold cuts) and locally produced wine included. To us it was a feast. The balsamic vinegar produced here is to die for. It was heart warming to see the family business and how everyone was seemingly involved, and how family traditions were continued regardless of the business viability of it. It’s safe to say this was probably the highlight of our trip.

      Incredible Balsamics!
      My wife and I took the italiandays.it, DOP food tour at the end of August, where we toured the San Lucio Parmigiano Reggiano production plant, the Salumi Leonardi Prosciutto Factory and Acetaia Cavedoni balsamic vinegar loft. While all were great fun, the highlight had to be the Cavedoni balsamic vinegar stop. Our guide Arianna from Italian Days was extremely knowledgeable about the history of DOP balsamics and the selection of vinegars that Marcello Cavedoni presented to us for tasting were incredible. This has nothing in common with what you get in the US at supermarkets, which should not even labeled balsamic vinegar. We were blown away by how good they are. We highly recommend you stop and try the Cavedoni balsamics and meet Marcello and his father Paolo, you will not be disappointed!

      Best thing we did on our 2 week Italy vacation
      Our family toured this Balsalmic Vinegar facility and would do it again in a heartbeat. We made the trek from Modena to the facility by taxi, which happened to get lost...but luckily I had the phone number for the facility, and we arrived within minutes. The expense of the taxi and getting lost was all but forgotten after meeting and seeing how interesting and welcoming are hosts/owners were. We walked in to seeing the owner placing the DOP stamp on balsamico vinegar bottles, and knew that we were going to enjoy our visit. We were given detailed explanations on how balsamic vinegar was made, step by step & barrel by barrel, treated to delicious local meats, cheeses, and wines. We sampled different types of balsalmic vinegars and different aged vinegars. We knew we were going to place an order for Balsalmic vinegar but were worried how'd we get it home. All our worries were for nothing....they ship. We bought $400 worth of Balsalmic vinegar and the "rose vinegar", which they said was comparable to red wine vinegar, for our consumption and for gifts for family. We received our items within 3 days and couldn't have been more pleased with spending the $50 shipping fee. We visited Modena solely based on going to this Balsalmic Vinegar facility (and this region's excellent food) and we were ecstatic with our decision. We were in Italy for 2 weeks, Positano, Rome, Florence, Modena, and Venice, and did many day trips/tours....this was our favorite activity. We learned so much about Balsalmic vinegar and the passion one must have to produce it, enjoyed our time with the owners, and now have excellent momentos from our trip. Thanks Marcello & Paolo!       A wonderful experience
      I arranged this trip because it was something that my wife wanted to do. What an awakening - I never knew how amazing vinegar could be. This side trip was my Northern Italy high point. I enthusiastically second all positive comments from previous reviews; but I'd like to make some comments on transportation. We were staying in Bologna and many previous reviews made it sound like an expensive and tedious journey from Bologna - it was not at all difficult. I think that others tried to get to Castelvetro via Trenitalia (the national train line). That's not a good choice. We took the TPER (Trasport Passeggiri Emilia Romangna) train from Bologna Centrale to Vignola for 3.5 euro. The day prior to our visit, we called Marcello and he helped us arrange for a cab to meet us at the Vignola train station. The trip to the Aceteria was about 20 euro (consider it a tour through the countryside).

      A must visit when in Modena!
      We visited in July 2017. We took the train to Modena and got a taxi from the station. The visit and tasting was brilliant and Marcello's English was superb. Marcello also kindly took us to the local parmigiano reggiano factory however production had finished but we did get to look at the huge store-room of cheese and purchase some amazing 36 month parmigiano reggiano which was also very cheap! Thanks Marcello, and sorry its taken so long to leave a review!

      “Real Balsamic!”
      You’ve heard of wine snobs? So after a visit here you’re on your way to becoming a balsamic vinegar snob! All the more evidence as to Italy’s great food and joyful sense of life. Our stop here was part of a great day long “food tour” out of Bologna. It included an on-site 10:00 am pastry breakfast (with wine) and then sampling of all their various renditions of aged balsamic vinegars (you really can taste the grapes!) They (total family operation) do a great job of also showing you how all this is accomplished and then stored. After a lifetime of commercially made, off the grocery store shelf balsamic (good for cleaning your bathroom the guide jokingly told us) here’s your opportunity to experience the real thing! If you’re in the neighborhood do stop by; and consider buying some of the small bottles they have on sale as gifts for the folks back home.

      Outstanding
      We visited Acetaia Cavedoni for a balsamic tasting advertised on Trip Advisor. Located a few km outside Modena the location was easy to find. We were warmly welcomed by Marcello who was our guide. This is a small family business and their experience, pride, and enthusiasm shows in every aspect of their business. We were shown the vineyard, the picking and pressing of the grapes, and the cooking of the grapes. The making of high quality balsamic is a long and detailed process. Marcello answered all our many questions and we proceeded to the tasting accompanied by a simple snack food. Their tour showroom is a showcase of their family history and their balsamic products. We had a wonderful couple of hours. Highly recommended.

    The trip was above and beyond expectations. The host Marcello was passionate about his family’s 6-generation art of vinegar-making, and candid about the “secrets” of the industry — learned a ton during the experience. The tasting at the end was high quality and extremely generous, and we were able to try out a wide range of his family’s offerings. It is this sort of genuine Modenese family operations that tourists need to experience, not those large-scale commercial productions. Thank you, Marcello!

    My husband and I found this beautiful location through this very website but not one positive review could have prepared us for this unbelievably amazing experience!

    From the very beginning we were treated not just as customers but as honored guests and, dare I say, as friends. From an incredibly interesting and informative tour around the property (vineyard, Barrels storage room and workshop) to a delicious tasting of all differently aged balsamic vinegars accompanied by local cheeses, meats and home made Lambrusco, this place was the highlight of our trip.

    Marcello, our loveliest of tour guides, answered all of our questions about his trade and also showered us with excellent tips about the different sights one should experience in this beautiful region. His wife backed us a surprise chocolate cake we couldn’t stop shuffling in, and overall we felt for one afternoon like we’re the honor guests of this traditional family. I deeply recommend this tour and we will definitely be back in the near future.

    Once again, our warmest thanks to this wonderful man and his family who opens their doors to anyone interested in their culture, trade and way of life.

    Gorgeous property, wonderful in the sunny weather. Excellent and informative tour by passionate family business. Balsamics were intricate and complex, and the lunch (with desserts) was lovely. A few extra glasses of Lambressco (also produced by Cavedoni) was a nice touch. The massive quarter of three year old Parmeggiano Reggiano which we ate essentially our fill of, would have accounted for half the price in Canada! Good value, pleasant and comfortable experience.

    Generation five and six Cavedoni were the most amazing hosts you can ask for. Very interesting tour where you get to learn all you need to know about the balsamic vinegar. Fantastic tasting. I would recommend everyone to experience this tour. The English was extremely good as well!

    Very relaxing and informative afternoon. The host is a real professional and obviously passionate about the family business and entire industry. At the end of the tour you get to eat some treats and chat with both guests and the host which is a great finish to the entire experience. Highly suggest booking your Modena balsamic experience here.

    Marcello and his entire family are so passionate about what they do and the love and care they put into producing a truly wonderful product really comes through in the taste. So many variables, the grape, the must the barrels the handling, but the craft and skill of a 5 star quality producer comes through.
    An introduction to the process along with a family history and tasting were great starts but please go for the gourmet experience where wine cheese hams and deserts really bring out the best in a few drops of balsamic and it only takes a few drops!

    What an experience in such a beautiful setting learning all about the process of making real balsamic vinegar from scratch.

    The Cavedoni family has an interesting history and it’s nice to see that the six generation is continuing their passion of producing quality balsamic vinegar.

    We were able to taste the different ages of the balsamic vinegar which was amazing!

    They ended the tour with an amazing lunch incorporating the variety of balsamic vinegars.

    Would definitely recommend visiting them.

    This was a great tour! We learned and saw how traditional balsamic vinegar is made along with other balsamic products - and how to really tell them apart! The tour was led by one family member and we also met his father. This is truly a family business.

    I had been on a tour at a different balsamic house, but the explanations given during the tour were much better and clearer. Making this product is a truly unique process.

    And then there was the tasting... of course, you are going to taste their products at the end, but I was surprised at the quality and quantity of the other products offered as well - Parmigiana Reggiano, prosciutto, other meats, bread, etc. It was nice to be able to taste the balsamic products with others - just as you normally would.

    100% satisfied with this activity and the purchases made!

    We spent a great afternoon learning all about Balsamic Vinegar. We had a tour with Marcello, who is so passionate about what they do and his English is fantastic! It was incredibly interesting hearing about how balsamic is made and what to look for to get quality (now we buy different balsamic from the supermarket at home!).
    After the tour we sat down to taste different vintages and Marcello's wife made us some divine snacks to go with it! Lovely wine served with it too. Paolo, Marcello's father came out and encouraged us to drink and eat more. His English isn't so great but he made for that with enthusiasm and luckily I speak some Italian so we had some good laughs with him!
    This is a wonderful, family run company who are clearly passionate, enthusiastic and proud of their Aceteia. As they should be becuase their produce is delicious! We bought 2 different vintages of Balsamic and a bottle of Saba too.
    Grazie mille Cavedoni family for a wonderful afternoon!
