Having lived in New York area for the past 25 years; I have eaten at many great restaurnats. Although celebrity chefs are fun to watch, not all of their restaurants are worth the price to eat at.
Many famous eating venues in Las Vegas are owned/operated by celebrity chefs. Some have 2 or more restaurants within a block of each other. And almost all of them are located inside hotels and casinos. During a recent trip to Las Vegas, I tried to stay away from the obvious and more crowded ones while still eating at a few fine dining venues. Here are my recommendations:

- American Fish at Aria Resort & Casino- Seafood with a nice, yet simple twist by Michael Mina> I also liked the earthy, open and contemporary decor. Good wine list including by the glass choices. Prompt and Courteous waiting staff made it a memorable meal. A la carte & pre-fixed (2-course dinner: $55+/person+drinks & tip/ pre-fixed $90+)
- Twist at Mandarin Oriental- French, just a tad lighter with less heavy sauces, served in beautiful dishes and an elegant atmosphere. Great wine list, tasty dishes and seamless service make this a place to linger at and enjoy. The appetizers are expensive but on they have a great small sides that can be ordered as appetizers for $12 each. A la carte & pre-fixed (2-course dinner: $65+/person+drinks & tip/ pre-fixed: $100+)
- Tea Lounge at Mandarin Oriental- the High Tea is an event here. Nothing like sipping great cup of tea and munching on tasty bites while enjoying great views (over the Strip, of course). Although not inexpensive, it is a great late lunch substitute.
- Mix at THEhotel/Mandalay Bay- French/American with a modern take by Alain Ducasse. Forget about the food- the VIEWS from the top over Las Vegas, especially at sunset and at night, are unbelievable. If you don't plan on a spending too much, this is one place you can enjoy the views for free. There is a big balcony to enjoy the scenary for a few minutes. Also, the bar/lounge has direct views and shares the same kitchen as Mix. A la carte & pre-fixed (2-course dinner: $70+/person +drinks & tip/ pre-fixed: $90+)
- Mon Ami Gabi at Paris Hotel- A casual French bistro and great for having lunch. What it truly has going for it is the location. It is directly across from Bellagio and has a great big terrace from which you can enjoy the famous Fountain Dance while having a drink or a late lunch. Plan to arrive around 3 pm or later to watch the Fountain Dance. (2-course lunch: $20+/person +drinks & tip)
