Cafe Crepe has 3 downtown locations, one at 874 Granville Street, one at 796 Granville and another at 1032 Robson. They aren't fancy, but reasonably priced for breakfast or other light meal. For a light Italian style breakfast, try Scuie at 800 E Pender St. The Caffe Artigiano at 740 W Hastings St serves pastries to go with their excellent coffee. There's one at 760 Hornby too.
In the West End, try Acacia Bistro at 1103 Denman for an unusual Bulgarian breakfast of banitza, burek or fillos. They also have variants of Eggs Benedict, but with a yogurt sauce instead of hollandaise. If you only want coffee, Delany's is next door. There are also a couple of "greasy spoon" breakfast places further north on Denman.
If you really want a budget breakfast, go to Vancouver Community College at 250 W Pender St. The second floor has a cafeteria and reasonably priced food. In summer, it's likely to be closed on the weekend. If cost isn't an issue then the most scenic is Cafe Pacifica overlooking the harbour and mountains from The Pan Pacific Hotel.
