Last year I had the opportunity to take a tour of the Boyaca countryside with my Colombian mother and her 30+ high school classmates. Each year the women hold a high school reunion in a different location - when one of the classmates insisted on spending the afternoon at Hotel Refugio I knew it had to be top notch.
The grounds of this hotel/restaurant are beautiful. They are located off a big lake surrounded by fields of green onion crops. The Colombian chefs made a feast for our large group - I had the trout in tomato sauce and a warm bowl of creamy green onion soup. It was amazing! While the group socialized indoors my dad and I wondered the grounds playing with a puppy and petting the sheep that served as lawn mowers for the property. The only issed that we ran into is the huge staircase leading down onto the property and heading back up. It was surrounded by gardens/greenery and I thought it was beautiful. However, I noticed it was a steep climb for some of the folks in the group. So worth it if you have the chance to dine here!
