I've stayed at Hostal Jerez about six times in the last four years and it has never disappointed. It's very central, right by Gran Via Metro and just a 3 minute walk from Puerta del Sol.
It's on the 6th floor of a beautiful building and is very safe. This time when I visited I discovered it has a doorman, who I think is employed by the hotel which inhabits the bottom four floors, but he's very friendly and chatty regardless of which hostal you're staying in.
The staff are very welcoming and helpful. They speak a variety of languages but are very pleased if you try out your Spanish with them!
There's a small fridge in the reception area selling water and cold drinks in case you're desperate for something in your room.
It's extremely clean and has been refurbished in the last couple of years.
The rooms are a decent size - the single rooms are perhaps just a tiny bit cramped but for one person, how much room do you need?
The bathrooms all have short baths and very powerful showers.
It's quiet and safe. Free WiFi.
On my last trip, the receptionist was happy to call a taxi company to help me arrange a cab to the airport.
It's reasonably priced. I booked about six weeks in advance and my single room was €45 per night.
I can highly recommend the hostal for a short trip to Madrid.
One extra note: Some people will be put off by the fact that it's on Calle Montera, which is rightfully known as "Prostitute Street", but don't let that worry you. It's a main thoroughfare with loads of shops on each side of the road. The main police station is halfway down the road and being right on the corner of Gran Via, it's well-lit and there are lots of people around all the time. It's true that the local prostitutes hang out in the street day and night but that is no problem whatsoever. There is no feeling of threat. Remember that prostitution itself is legal in Spain - it's pimping that's illegal.
