Eleuthera is an amazingly beautiful and friendly island. Seven Gables has lovely cottages with stunning sea views. Our cottage had windows on 3 sides with water views from all of them, and a lovely terrace right over/in front of the Caribbean sea, and all of the others seemed just as nice. Beautiful sunrises and sunsets. It was very clean and charming, and the screened windows let the breezes in and kept the mosquitoes out. That and the sound of sea made it perfect for sleeping. The small kitchenette has everything you need to make simple meals - mini fridge, hot plate with pot and pan, coffeemaker and glasses, plates, utensils. The owner, Arrington McCardy, is very friendly and helpful, but also low key. He has a couple of bikes available for guests, but its really easy to hitch hike everywhere in Eleuthera, and it's a great way to meet locals.
Hatchet Bay is a quiet town, where most of the tourists come from boats docked in the harbor. There are a couple of local bars, 2 grocery stores, and one restaurant. A few locals sell takeout food from their homes as well. The beach next door to seven gables is nice but a little rocky for swimming. Surfer's beach is only about 4 miles away, and any beach on the island is easily reached by rental car or hitching.
