 Weekend in New Paltz, NY

I'm planning a surprise birthday weekend for my boyfriend in New Paltz - our 8 year old Lab will be escorting us.

I would love some suggestions on things to do while we're there.

We are staying in the Clover Cottages and I'd like to see the best of the best!

From reading the blogs, I'm thinking:

Friday pm - explore New Paltz, Hugenot Street and dinner downtown (Beso Restaurant?)

Saturday am - hiking (what is the best place to see the leaves change and dog friendly?!? Mohonk Preserve, Catskills Forest Preserve, Minnewaska Stat Park and/or Willowemoc-Long Pond Wild Forest)

Saturday pm - Dinner and Wineries (Is Whitecliff best? Should we do Shawangunk Wine Trail)

Sunday am - Hiking and Apple/Pumpkin picking (Dressel or Wright's farms)

Would love additional suggestions!

We have been to New Paltz several times. In our opinion, Beso is the best restaurant in town. I like their meat and fowl dishes over the fish. We also like Gadeletos for very fresh seafood- a casual place with a seafood store attached.

I prefer hiking and mountain biking in Minnewaska. I find more actual trails to hike there although both this park and Mohonk have primarily carriage roads that people hike on.

We have done the wine trail and are not at all impressed. Whitecliff has a very nice tasting room and a lot of wine to try ( for a fairly high tasting fee) but I do not like their wines. In fact, I do not care for most of the wines at all various wineries.
