All of the above if you have time. If you only have time for one it would be the Albert Cuypmarkt.

Albert Cuyp for me, no question.
There is s fantastic spice & herb shop about half way along (Near Bazar restaurant which is well worth a visit) which you should not miss.
The Noordermarkt is much more a foodie market. However it is really expensive, think around €4 + for a loaf of bread, nice as it is. I would only go there for something special as I can get good bread locally anyway. They do have fantastic cheese stalls there. It is only on a Saturday (also on Monday but not the food farmers market).
OK the Albert Cuyp is the most famous I guess and its actually my local market however I would not go out of my way to go shopping for food there. There are no bread stalls. There is a branch of Bakkerij Simon Meysen at the Ferdinanad Bol end of the market but then this is a chain of bakers anyway. The best bread shop in the area is actually on the Albert Cuyp but not in the Market, Bakken met Passie which is further along the street past the McDonalds. You can also get a decent coffee in there along with great croissants.
You can get decent herbs, fruit and veg cheaply in the Albert Cuyp but you have to shop around. There is a good fish selection but it is not cheap. Yep the spice shop is ok but there are better places in town. The best place in central Amsterdam for spices is the Asian supermarket on the Neiuwmarkt. The best fish shop zeevis-groothandel.nl/vishandel-tel/… is also there. There’s also a small food market on the square there some days.
By the way Brian I have discovered a great Chinese supermarket http://www.amazingoriental.com/ . They also have a branch in Utrecht closer to you. The spices in there are really cheap, like less than half the cost of that place in the Market you mentioned. 500g peppercorns for €5
I don’t really have experience of the Dappermarkt but I believe it’s pretty good for food and cheaper than the AC.
I'd tend to agree with Ron on this one - I think the Noordermarkt is probably what you're after. It is indeed expensive, but it's foodie heaven. In season, the mushroom stall is amazing. The bread stalls are expensive, but the foccacia is worth the cost, and there's a stall that sells freshly smoked mozarellas which are REALLY special.
There is also a cafe by the market (Cafe Winkel) that serves (allegedly) the best apple cake in Amsterdam.
Round the corner on Haarlemmerstraat (number 108) is a great bakery called Vlaamsch Broodhuys, which is a chain shop, but absolutely none the worse for that - it sells gorgeous artisan bread a lot cheaper than the Noordermarkt bakers.
And from there, 5 minutes' walk along Haarlemmerstraat towards the station will take you to a cheese shop (another chain) on the corner of Singel. Kaasland, I think it's called. They sell really lovely basil and garlic cheeses as well as all the usual Edams, Goudas etc. You can get good matured cheeses there too, and they are also lot cheaper than the Noordermarkt stalls.
You can do the whole lot in an hour or so (longer if you decide to queue for a table at Cafe Winkel).

We got some really good, and cheap, cheese at the Saturday market on Lindengracht, some nice tastings to be had, as well as many other offerings.
If you are around on the Saturday, give it a try. Albert Cuyp is a large market with all kinds of everything and is also a good choice, depends really what you want, (quantity/quality etc) and how much time you have.

Is Lindengracht a street name? or market name? Fron Amsterdam central station, how can we get to Lindengracht? Does it only open on SAT morning? Besides cheese, does it sell other food as well?

It's both. Just use google maps, it's about 12 mins walk from Central and the nicest route is to follow Brouwersgracht from its start close to Central. Yes Saturday is the main day. And it has all types of veggies and food. Nice to combine with Noordermarkt, almost nextdoor, which indeed is more 'upmarket' ;-) and focuses on organic.

There is an organic food supermarket on the Rembrandtplein, Markt. Very nice stuff in there.
As Erik describes, the route is very picturesque along the canal, we went about 2pm on a Saturday afternoon, and some stalls were starting to pack away; As I said, there are other tastings - not just cheeses, but other food, breads and also some bric a brac, antique sorts of stuff and bit of everything. Not as expensive as the nearby Noordermarkt, but not as 'exclusive' either - but, yes, maybe combine the two, and as per the other thread - just try having a look at google maps, you can see the route on the street view so you know you are going the correct way.
