I have a 5+ hour layover at SLU. Is it possible/worth the effort to try to see a few sights and/or grab lunch somewhere outside of the airport? Any suggestions?

SLU is a very tiny airport, so, yeah, it's totally possible. There's some little food/drink shacks right across the road as you exit airport, right by the water. You can hang there or take a taxi into Rodney Bay strip (about 20 min. ride one way) and there's lots of places you can hang out at for awhile. If one doesn't suit you, can walk to another. Or I've heard lunch at Auberge Seraphine (small hotel/restaurant) right in Castries overlooking the harbor (5 mins. from airport) is quite nice. You're fine being back at the airport one hour ahead of departure time, but if you go to Rodney Bay, rush hour traffic can be quite bad and a 15-20 min. ride can be 45 mins, so be sure to allow time for that.
Layover is 9:00 - 2:00 pm, so hopefully rush houtr is not an issue then.
How about a street market or something local? Would that be available on a Thursday?
you can head into Castries proper and find loads of local eateries - there are several right inside the craft market - excellent local meals.
There are also local eateries dotting every corner and street - most don't have name signs, etc, they just are little hole in the walls with great meals. There is also several Chinese places, Subway, Dominos, Burger King and The Patty Shack all in Castries proper. Upstairs Blue Coral mall is a combo local/chinese food counter - remarkably good food. And a bit of shopping if you want it.
It is about a 2-25 minute walk over to Castries or a $10US cab ride over to the Craft market from the airport. You can easily catch a cab over to the craft market and walk around to find what you want and then catch a cab from the craft market back to the airport.

The Coalpot restaurant is nearby and one of St Lucia's best and that does a nice lunch.

If you want to go sightseeing Pigeon Island is about a 20 - 25 minute drive from the airport, there are a couple of very unique restaurants and 2 beaches on the island. Check out the ruins of Fort Rodney and hike to Signal Point for amazing views of the the surrounding region. And there's a small military museum that tells the story of the battles for control of the island between the French and English.
You could do the helicopter island tour
The craft market sounds like my speed. Would it be worthwhile to take a short taxi tour around that portion of the island?

There isn't too much to see locally. See the attached Island tour spec and the local bits are the Cathedral and Morne Fortune. You could also see a view of Castries harbour from high above, a babana plantation and if wanted the Caribelle Batik showroom plus additional out of town craft shopping It would take about 60/90 mins plus any shopping time

For your info when your ship docks it could be at either side of the cruise port. One is next to Place Carenage (shops) and the craft market is adjacent/across the road. The other option is Porte Seraphine (shops) plus a 30 min walk or a 5 min taxi to the Place Carenage side

Sorry forget about the port bit. SLU is a 5/10 min taxi ride from the craft market area.

I'd take a five minute walk and sit by the nice pool at auberge seraphine and get a nice lunch, you will more than likely have the pool to yourselves, relax and swim before your flight.
