Description: When hospitality entrepreneur Charlie Palmer comes to town, you can expect the master chef’s signature elevated American cooking—and more. Although based on culinary tradition with a deep and lasting infusion of classical French cuisine, Palmer’s food has always been an extension of his personality—and there’s no denying that he’s a big American guy. Influenced by his childhood experience working in his family’s vegetable garden, Palmer was an early advocate of farm over factory food. In 1988, he made a landmark commitment to creating dishes featuring regional American ingredients at his sublime three-star Aureole, situated in a brownstone off Manhattan’s Madison Avenue. “In Texas, we’re going beyond free range,” says Palmer. “We’re into free will.” Although the menu features entrees in all the major categories from meat to shellfish, how the meal comes together depends on the individual diner. “Why shouldn’t we let people choose sides,” asks the chef.

This is one of our new favorites. Service is some of the very best in Dallas. Who else brings you a wine list on an iPad? I could literally make my entire meal out of their polenta. More

Friendly valet parking attendants. This steakhouse is located in The Joule, which is a boutique hotel. The waitstaff was friendly and knowledgable about the menu. Our steaks were very good and cooked as requested. The highlight of the evening was sommelier, He was very friendly and very knowledgable of the extensive wine list. He helped us select an outstanding wine. More

The food was good. The Salmon with crab was quite tasty. $16.00 for a a mediocre hamburger not a good deal. $20 for a glass of Pinot Noir that has been opened and not preserved in anyway, shows a lack of wine experience. Charlie Palmer should know better, More

Birthday dinner date. Our table was not ready so we sat at the bar. Overheard guy next to me complain his lamb chop took 45 min.to be served. I finally went up and asked about our table. Dallas doesn't lack great restaurants, so when one stands out, it's worth writing about. Charlie Palmer's is my favorite steak house in Dallas. The food is delicious and has just the right balance of original and traditional. The service is impeccable. It's quiet, but not boring; elegant, but not snobby, and the steaks melt in your mouth. More

From the wine selection to the peanut butter dessert, the meal was perfect! The service and ambiance was awesome. We will definitely be back. More

The restaurant is housed within a boutique hotel in downtown Dallas, Texas. The food is unbelievable as is the service and ambiance. They have an extensive wine list which includes a wide-range of types and prices. I have been here several times and have never had a bad experience. More
