Absolutely loved this place, great choice of Tapas and fantastic quality. Recommend you book a table, we booked at 11am to get a table for around 3pm and we were cutting it fine. Overnight stop in Brighton and found this place purely by chance. Convivial hosts, nice atmosphere (very busy) and good food. The tapas menu is extensive without being ridiculous. I had grilled sardines to start, paella & a half-bottle of white Rioja. £22. You can't argue with that & I'm sure I'll return when next in Brighton.

Top class restaurant in Brighton for many years! Looks and feels like you are in Spain enjoying your tapas cooked in the best possible way! Apart from the fantastic normal menu they have lovely daily specials... excellent food, friendly staff and great atmosphere... highly recommended!

Casa Don Carlos had been recommended to me by several people. My daughter and I booked a table for a Wednesday night and found the place full of happy customers happily tucking into the most delicious looking dishes. After shopping in Brighton we thought an off-the-cuff lunch was deserved and picked Don Carlos at random. To make the most of Casa Don Carlos, I recommend a decent amount of friends, lots of dishes and lots of wine. This is a great place when it is all going on. I've been several times and my friends even hired it for their wedding reception. I don't know many tapas places in Brighton but don't overlook this one.
