I don't travel to a another country to have "American" food and neither should you. Life is too short not to try something new. You might as well stay at home! For the ultimate St Maartin experience you must go to Hilma's Windsor Castle. My brother ordered the Oxtail Soup which was a very generous portion of comfort food goodness.... More

I saw Hilmas place on the No reservation show by Anthony Bourdain 2 1/2 years ago when I was planning my trip. I went 3 or 4 times in 7 days. Next time you are in St. Maarten you would be foolish not to stop by Hilma's Windsor Castle on Airport Road next to RBTT Bank and across from Palapa Marina. Hilma's provides a wonderful food experience with her fresh made breakfast, dinners and sandwiches. If you want to learn about real life on St. Maarten, pull up a stool, ask for her recommendation off the menu and order a Dutch coffee. You will NOT be disappointed. This is not your average "Fish Sandwich"! Salted fish on Hilma's special bread is yummy. My husband, Jerry really enjoyed his breakfast sandwich. Hilma is so friendly and will give you an update on the Island.

This was the first place we went on St. Martin and it really gave us a good first impression of the island. It's literally a trailer on the side of the road. But Hilma's treats are delicious. We had porkchops with coleslaw and some johnny cakes! Yum! Hilma's johnny cakes are the best on the island! Get a cold beer... More

This place is amazing. It looks like a little brown holiday trailer on the side of the road. Hilma is the queen of her castle, and is a delightful character. Hilma’s is a small faded old brown camper trailer on the Dutch side of the island with no sign, no menu and no tables.
